For the Tomato Pesto Sauce:
2 tablespoons Syrian Gourmet's tomato paste
1 cup fresh basil leaves
2 cloves garlic
1/4 cup pine nuts or walnuts
1/4 cup pine nuts or walnuts
1/2 cup Parmesan cheese, grated
1/4 cup Syrian gourmet's olive oil
Salt and pepper to taste
For the Orange Element:
Zest of 1 orange
2 tablespoons orange juice
1- Make the Semolina Pasta:
2- On a clean surface, mound the semolina flour.
3- Gradually add water and mix until a dough forms.
4- Knead the dough for 10 minutes, then let it rest for 30 minutes.
5- Roll and cut into your preferred pasta shape.
6- Boil in salted water for 3-4 minutes until al dente.
7- Prepare the Tomato Pesto Sauce:
8- In a blender, add Syrian Gourmet's tomato paste, basil, garlic, nuts, and Parmesan.
9- Blend until smooth.
10- Add olive oil and blend again.
11- Season with salt and pepper.
12- Add the Orange Element:
13- Stir in the orange zest and orange juice into the Tomato Pesto Sauce.
14- Combine Everything:
15- Drain the cooked pasta and return it to the pot.
16- Add the Tomato Pesto Sauce with Orange.
17- Toss until well coated.
